A ONCE IN A LIFETIME DREAM COME TRUE! Dining Omakase style at Hiaku will be at the top of our favorite experiences ever. Chef Albert Diaz has earned his stellar reputation and deserves all the praise. He has a true passion for cooking, insatiable learning and sharing of the dishes he prepares. Be ready to pinch yourself upon entering Haiku. A calm comes over, and you can breathe and feel relaxed. The decor is amazing, simple, modern, luxury. This is the cleanest resteraunt, kitchen, loo etc., ever! Chef Albert greeted us with great, cool bubbly champagne while detailing what was to come. In Japanese Culture, Omaskase means, “I’ll leave it up to you”, allowing the Chef to choose the ten to twelve dishes to follow. Buckle up because Chef Albert throws out all the stops and somehow out does the dish you just had by another “oh, this is my favorite.” I do not take pictures of food, but I made an exception, because the visual appeal in Omakase is part of the enjoyment. The Sake and different wine pairings were perfect. From caviar, to many fresh fish dishes, his Chawamushi was a lobster broth with egg custard made to perfection. Two Wagyu Beef plates, one a Japanese Wagyu sandwich style and an Australian Wagyu slightly seared. My mind was trying to take it all in and remember each detail, but there were too many. I began my review with this was a once-in-a-lifetime experience, if the opportunity ever arises to go ANYWHERE Chef Albert is cooking I'll be there! We all have opinions and it is nice to see others' experiences, there is normally one fly in the ointment, and they are critical of everything. Hiaku had only one negative review. The coward writing it should be banned from leaving any on Google or anywhere else. I did some research and this is his MO at EVERY place he goes to. Bet he is a gem to live with. Finding the words to describe an experience at Haiku should be easy; however, I find myself lacking the vocabulary to truly capture how sensational dining here is. My husband and I have been members since the beginning. We have dined in over 35 countries and hundreds upon hundreds of venues, and I can say with wholehearted honesty that Haiku is a culinary experience one could never grow tired of. In fact, it is the only dining experience we have had that somehow continues to get better every single time. Chef Albert and Chef Oliver are a godly pair in the kitchen. My husband and I have even requested that they create their own renditions of beloved dishes we discovered during our travels. And when I say they can make anything better than anyone else in the world, I truly mean that from the bottom of my heart. We have dined at Haiku both with large groups and as just the two of us. Each time, the experience feels just as special as the very first visit. The attention to detail in the ingredients, and the love poured into constructing each dish, is pure artistry..not only visually, but for the olfactory and sensory experience as well. I would be doing the experience a disservice if I didn’t mention the incredible depth of knowledge that accompanies every meal. There is always a story behind the dish or the sourcing of the ingredients. You can see, taste, hear, and feel the passion that has gone into making Haiku what it is. 5 stars is not enough.. I would give 10.
