Okay, the Gibson Room and I have a complicated history. I used to love this place, then it went through a phase where it felt like it was trying to be a fine dining restaurant — which, on Coral Way, never quite clicked for me. I quietly stopped going for a while. But a friend convinced me to give it another shot and honestly? Really glad I did. It feels like it's back to what it does best — a laid-back cocktail bar with really solid food. The drinks were well-made, the burger was awesome, the chicken parm sando was legit, and I got a kick out of seeing Miami Slice pizza by the slice on the menu. Service was fantastic too — friendly, attentive, always checking in without hovering. One honest piece of feedback: the prices are still a little steep for the neighborhood. This is Coral Way — a real, working-class Miami community — not South Beach or Brickell. Hard to be a regular here at these prices. Bring them down a notch and I think you'd have a packed house on a Tuesday. Either way, worth going back. Glad they found their lane again.
We ended up here because we wanted a later dinner and almost everywhere was closed. Our waitress Salma was so nice and on top of everything. Burger was delish and so was the pizza. I did feel the projector took away from the vibes of the place but i’m sure other people appreciate having something to watch. Overall we will be returning and i can’t believe it took us so long to try it out. This place is the perfect date spot btw.
This was our first time visiting the Gibson Room after their joint venture with the Miami Slice team, and I must say, that all the good things you hear on how good it is, it is all true! We had an AMAZING experience. We sat at the bar, as there were no tables available, had cocktails, a couple of pepperoni pizza slices (you can never go wrong with it) and the cheese burger, super simple but yet so JUICY and FLAVORFUL, it is just PERFECTION! This is the perfect setting for any night of the week either with friends or a special someone ;)
We had such a great experience here! We stopped by on a Saturday night for drinks and burgers, and everything was spot on. The service was outstanding, the burgers were juicy and full of flavor, and the music and lighting give the place a really cool speakeasy-style vibe. We expected something a bit fancier, but it’s actually relaxed and fun in the best way. Definitely a spot we’d come back to.
We visited the newest version of the Gibson Room. The atmosphere is sophisticated and the service is excellent. They played good music and its a lovely spot. They have a good happy hour. They have a limited menu featuring burgers, and Miami slice pizza, a steak and some appetizers. All were nicely prepared. The cocktails were very good as well. It's nice to have a cozy New York style lounge in Miami. Only thing i would recommend is a better selection of wines. Give it a try.
